
Hello all, today I am sharing my easy recipe for Margherita Orzo Pasta Salad.

As summer is starting to wind down and your garden harvest is coming in, I wanted to share another one of our favorite fresh summertime treats which has been a staple this season, my easy Margherita Orzo Pasta Salad.
It is no secret that every year I plant a wide variety of tomatoes in my Raised Planter beds, as seen here, along with all of the types of fresh herbs to help support creating my many tasty dishes at home. This particular practice ends up saving me a ton of money since fresh herbs alone in those little gourmet grocery packets can run upward to $3-5 a piece, which is why these gardening tips can help feed your family for pennies on the dollar.
This recipe is just like making my basic Easy Peasy Caprese Salad, but with the addition of orzo pasta. This is a great way to stretch your ingredients a little bit further if you find you harvest is getting lighter toward the end of the season, by in a box of cooked orzo pasta.
I find that the orzo pasta in not as overpowering as other types of pasta like a penne, bow tie or spaghetti. Which you could certainly use it that is all you have, but I personally like the bite that a nice al dente cooked orzo adds into this mix with the fresh tomatoes, basil and mozzarella.
Margherita Orzo Pasta Salad
- 4 cups Tomatoes ( any variety- the more the merrier) Sliced
- 8 oz Fresh Mozzarella Pearls or Slices cut into chunked
- 1 cup Fresh Basil Sliced into Ribbons
- 4 tbsp Oli+ve Tuscan Herb Olive Oil
- 1 tsp Himalayan Salt
- 4 tsp Fresh Cracked Pepper
- 16 oz box Orzo

Dice Tomatoes into glass bowl

Add Mozzarella Pearls and coat with Olive oil

Add salt and pepper store in Refrigerator until Orzo is ready to add

Cook Orzo in Boiling Water for 7 minutes drain in colander and rinse in cold water. Stir into the Tomato mixture

Add Basil Ribbons prior to serving and stir
